Autoxidation can be defined as a spontaneous irreversible chemical reaction in which molecular oxygen combines with nutrient principles in feed or raw materials, which results in, 'rancidity'.  Animal fats, vegetable oils, vitamins and pigments are highly susceptible to this spontaneous reaction.  This results in reduction of nutritional value, palatability, production of toxic compounds that affect the health and performance of bird or animal.

 

Autoxidation of fats is a spontaneous process influenced by several factors such as: Moisture, Catalysts (metal ions), Temperature, Enzymes, Type fat, Light and Air.  The process of oxidation is a fairly complex process and has been fairly well established.  It is a 3-phase process (Initiation, Propagation and Termination), which can be explained as follows:

 

The first phase of oxidation called initiation phase the free radicals are produced by the occurrence of light, air, temperature and heavy metals, these free radicals in the propagation phase fosters the oxidation process, results in high amount of peroxides in the and the termination phase is the breakdown of hydroperoxidases resulting in aldehydes and ketones.  The production of these stable end products is the chemical manifestation of rancidity.

 

 

 

CONTROL OF AUTOXIDATION

 

The most commonly used method of retarding lipid oxidation in fatty foods is by the addition of antioxidants. Antioxidants are substances used to preserve food by retarding deterioration, rancidity or discoloration due to oxidation. To be effective, they must be added as early as possible in the manufacturing process or to the finished fat. Antioxidants cannot reverse the oxidation of rancid oils, nor are they effective in suppressing hydrolytic rancidity, which is an enzymatically catalyzed hydrolysis of fats.
